The Octopus Carpaccio can be sliced very thin (0.04”), providing about 75-80 slices per piece, or about 25 portions of 3 slices per appetizer. The best slicing result is obtained when the product is still cold but defrost, around 32 degF. The unused portion of the whole piece can be kept in the refrigerated for up to 30 days.
